With the end of summer upon us, we need some easy recipes to serve our family. As I begin to start a new year of school and gear up for all the many adventures to be had, I don’t like to spend a lot of time preparing meals. Having a meal plan is essential in my home. We would spend twice as much at the grocery store if I did not do this. We would also not eat very healthily.

Below I will share some of my favorite end of summer meal ideas. I have not included the recipes but they are easy to find on Pinterest or Google. The meals are not complex or hard so the ingredients will be easy to find as well.

End of Summer Meal Ideas:

  1. Instant pot Italian chicken, steamed broccoli, and mashed potatoes
  2. Slow cooker beef tacos
  3. Cheese plate- good cheese, honey, bread crisps, grapes, candied nuts, crackers, lunch meat, sliced raw veggies, and your favorite drink
  4. Already prepared rotisserie chicken (from the grocery store), mac and cheese, and salad
  5. Cheesy beef quesadillas with rice and beans
  6. Grilled chicken, potatoes, and baked beans
  7. Ham and cheese omelets
  8. Sheet-pan lemon garlic chicken, green beans, and potatoes
  9. Chicken taco bowls
  10. Eggroll in a bowl
  11. Oven nachos
  12. Spaghetti with meat sauce and salad
  13. Burgers and fries
  14. Chicken salad wraps with sliced veggies
  15. Stuffed peppers with veggies and avocado
  16. Slow cooker creamy sun-dried tomato chicken with noodles and salad

As you can see, we love Mexican food. I make it at least once a week. I usually follow a this kind of schedule:

  • Sunday- leftovers
  • Monday- meat and potatoes
  • Tuesday- Mexican food (tacos, nachos, quesadillas, burritos, etc)
  • Wednesday- breakfast food (omelets, pancakes, French toast bake, etc)
  • Thursday- Italian or Asian food
  • Friday- leftovers
  • Saturday- soup in winter/grilled meat and veggies in summer

 

That schedule has saved me many times from not being able to think of something to plan. I hope these ideas help you get a good start for the new school year ahead. What are your favorite, easy recipes?
