With summer quickly approaching, many families are wondering what in the world to feed their children for lunch each day. Homeschooling families are pretty used to feeding their children all three meals a day. But that still doesn’t make it any easier to come up with ideas to keep lunchtime from becoming boring. I even get bored with lunch sometimes.

Below I have compiled a list of easy lunches for summertime. They can be made quickly and don’t cost very much. I don’t really go for extremely healthy but some of them are more healthy than others. I like to rotate through my list every couple of weeks.

Easy Summer Lunches:

  1. Meat and cheese roll-ups- I use flour tortillas and wrap meat and cheese in them. I add in some greens and tomatoes as well. I serve this with fruit, yogurt, and chips.
  2. Cheese quesadillas- These are a favorite at my house. I can make them with beans, leftover ground meat, or plain. I serve these with salsa and fruit.
  3. Spaghetti- I like to get different noodles for my kids to have fun with. For lunch I do not add meat to keep costs down. But, if you have some leftovers, add them in. I serve this with applesauce and a salad. Sometimes I make cheesy bread to go with it.
  4. Subs- My kids love subs. We keep it simple with just meat, cheese, and greens. I give them only a half of a sub each and serve it with fruit and chips.
  5. Homemade lunchables- These are so easy. I get our favorite meat (salami, pepperoni, ham) and add in some chunks of cheese and a few crackers. Voila! Homemade lunchable. They love to have yogurt and apple slices with this meal.
  6. Leftovers- In summer, I like to make extras of dinner to have for lunches the next day. It’s easy and quick.
  7. Homemade pizzas- I get premade pizza dough from the grocery store and cut it into smaller pieces. We each get our own personal pizza. I always have the stuff to make these. We top them with sauce, cheese, meat, and veggies. I serve applesauce to go along with the pizzas.
  8. Grilled cheese- This is always a hit in my home. Sometimes I add meat. For myself, I add tomatoes. They are so easy and yummy. We like to have fruit, veggies, and chips with our grilled cheese sandwiches.
  9. Mac and cheese- I love to make a big pot of homemade mac and cheese. We all have it for lunch and there’s always leftovers for the next day for the kids. I serve this with applesauce and veggies.
  10. Stuffed crescent rolls- I love making these. We put cheese, meat, and veggies in each one. They smell so good and taste amazing. You can also make pizza stuffed crescent rolls. I like to serve these with yogurt and fruit.
  11. Breakfast for lunch- My kids love eggs and breakfast food. I will make omelets with cheese and meat (I add veggies to mine). We eat fruit as a side.
  12. Chicken salad- We will eat either sandwiches or serve it with crackers. We have fruit and veggies as a side.
  13. Peanut butter and jelly- I have tried to get away from making PB&J but my boys love to eat them. Their favorite things to have with it are chips and applesauce.
  14. Protein shakes and fruit- I love making protein shakes for my boys. They don’t even know they are eating healthy.

These are just a few ideas to get you started with some summer lunches. Most of these won’t heat up the entire house and are very quick to make. I also like that my kids can do most of these themselves. It’s very fun to experiment with different foods with my children.
