Labor Day is the last hurrah of summer. It is the end of summer but the beginning of fall. It’s a time to relax and enjoy family time and good food. We always have a cookout on Labor Day and invite family and friends. Everyone brings a dish. After a few years of trying to make the perfect side dish, I have found that most people just want a salad of some sort, either pasta salad or garden salad.
Today I will share with you two easy Labor Day (or any day) salads that my family loves. I hope you enjoy them too!
Creamy Cucumber Salad
- 2-3 peeled and diced cucumbers
- 1 small onion diced very small
- 1 small container of sour cream
- 1 tbsp. Sugar
- 1 tbsp. White vinegar
- 1 tsp. dry dill
Mix all ingredients in an airtight container. Once it is mixed well, refrigerate for 2 or more hours. Can be prepared a day ahead of time.
Bacon Ranch Pasta Salad
- 1 box cooked elbow macaroni noodles
- 1 cup mayo
- ½ cup sour cream
- 1 package of dry ranch dressing (can make homemade or use premade)
- 1 cup frozen peas, thawed
- ½ cup carrot matchsticks (can make your own or prepackaged)
- ¼ cup bacon bits
- 1 cup cubed cheddar cheese (cube smaller than normal)
Mix together the mayo, sour cream, and ranch dressing until well blended. Add the macaroni until well blended. Lastly, gently toss in the remaining ingredients until well dispersed. Refrigerate for 2-4 hours or make a day ahead of time.
