Yep, it is “that” day again! You know, the one where you are in the car and on the go all day? Who knew it could come around so quickly, right?

Busy lives, busy schedules! Am I the only one? On days and nights like these, I am so thankful I can come home in between the craziness and feed my hungry family a decent meal. No drive throughs this week!

Here’s a treat for these still-cold winter days!

 

Slow Cooker Potato Soup

  • 4 large potatoes, peeled and diced
  • 1 TBS butter
  • 32 oz. chicken broth
  • enough water to cover the potatoes
  • salt and pepper to taste
  • 12 oz. can evaporated milk
  • Optional – bacon, cheddar cheese, chives to top

 

Add potatoes, butter, and chicken broth to crockpot, add water to cover. Season with salt and pepper.

Cook on high 3-4 hours, or low for 6.

Add evaporated milk 15-30 minutes before serving.

Top with favorite garnishes.

The only thing I would do differently is to add bacon, which we just did not have on hand. We did serve this with rolls and nothing else, because, well, it is all about speed on Wednesdays!
